Ingredients: 1 haas avocado (cubed into uniform, bite sized pieces. Make sure it is ripe, but still on the firm side); 1 English cucumber (cubed into uniform, bite sized pieces); 1 c strawberries (cubed into uniform, bite sized pieces); 1/2 red onion (thinly sliced); 1/2 jalapeño (thinly sliced, seeds included); 1 head baby romaine lettuce; 1/4 c cilantro (stems removed; reserve); 1/4 c sprouted raw pumpkin seeds (lightly toasted in oven); 1 small shallot; 3 tbsp maple syrup; 1/4 c apple cider vinegar (unpasteurized, unfiltered); 1/3 c extra virgin olive oil (unrefined); 1/2 tsp Celtic sea salt; 1 tsp black peppercorns; 1/4 inch piece serrano pepper; 1/2 peeled clementine mandarin; 1 tbsp dijon mustard; cilantro stems
