BALI • A Carrot Coconut Soup One of my mother's favorites from our menu at The Grotto, this Carrot Coconut Soup blends carrots, onions, garlic, ginger, turmeric, fennel, and pear with coconut milk for a velvety, aromatic dish. The vegetables are simmered until soft, then puréed for a smooth texture, and enriched with creamy coconut milk. It’s finished with a garnish of pomegranate arils, melted coconut oil, and bright citrus notes, highlighting the sweet-earthy flavors of the carrots and subtle spiciness of ginger and turmeric....
GOA • A Warm & Spicy Lentil Daal This Lentil Dal is a warming, aromatic dish built on cumin and mustard seeds bloomed in coconut oil, combined with fresh turmeric, jalapeño, ginger, onions, tomatoes, and tender lentils. A short pressure-cooking cycle intensifies its flavors, and it’s finished with fresh coriander for brightness. Serve with brown rice and garnish with coconut yogurt raita, coriander-coconut-mint chutney, dried coconut, fresh herbs, a lemon twist, and sumac....
