The obsession began nearly seven years ago, as kombucha was discovered to be one of the main components in a puzzle of finding balance from the inside out. After struggling for years to understand and calm what was happening to the vagus nerve (often called the gut brain) in myself and so many others, I discovered that the consumption of kombucha had the ability to change not only physical, but mental and emotional elements that I had never before understood.
Four years later, I had discovered another piece to the puzzle: I like many others, had been suffering from a lifelong allergy to wheat and gluten, or possibly worse, undiagnosed cœliac disease.
According to The University of Chicago Medicine:
Celiac disease affects 1% of healthy, average Americans. That means at least 3 million people in our country are living with celiac disease—97% of them are undiagnosed. Type 1 Diabetes affects 3 million people; 6% (180,000) of those diagnosed also have cœliac disease.
The unique enzymes and probiotics found in fermented foods such as kombucha had been calming my stomach, and changed my mood and outlook on life.
The vagus nerve is still relatively little understood in how it interacts with the brain, but findings indicate a connection between this nerve and autistic behaviors. Other findings indicate that there is a strong correlation between the presence of autistic behaviors and gluten-intolerance/cœliac disease.
Opinions and findings are extremely varied on this somewhat controversial topic, and while we cannot recommend anything by a way of treating or diagnosing these aforementioned issues, we would encourage you to speak with your dedicated medical professional, or other behavioral specialists about the possibility of there being benefit from daily consumption of naturally gluten-free probiotic and enzyme rich foods for relief.
I have personally enjoyed a better quality of life, since making the consumption of kombucha a regular part of my daily routine; my digestion, skin, and mood have all experienced drastic improvement, and I have enjoyed sharing and introducing this beverage to friends and family alike, many of whom have found kombucha to be far more satisfying and mood enhancing than beer, or other beverages.
